That’s what happened during our team’s recent visit to a chip plant tucked into Colombia’s coffee-growing mountains—an operation that quietly produces some of the most distinctive plantain chips in the category.

This isn’t where plantains are typically grown. Most of the industry relies on coastal plantations where fruit matures quickly and processing is efficient. But in the mountains, something different happens: the cool mornings slow down the fruit’s development. Sugars build gradually, settle naturally, and stay there. It takes about 20 extra days for these plantains to reach maturity—but the payoff is unmistakable.

The chips are naturally sweeter (without added sugar). The texture is firmer and cleaner—less mush, less breakage. And because the fruit is denser, the plant can slice on a bias cut, producing beautiful elongated chips that almost no coastal facility can achieve.

The result looks and eats nothing like the commodity plantain chips we all know: it’s elevated, intentional, and premium by design.

But the story doesn’t end in the field or fryer. Inside the plant, leftover packaging film—material that typically ends up discarded—is upcycled and repurposed as lining for handbags made by local artisans. It’s a small detail, but one that reflects the entire ethos: nothing wasted, everything crafted with care.
