The BIG MAC Is About to Change


I may be dating myself…but I’m sure some of you remember this famous jingle…

Two all-beef patties special sauce lettuce cheese pickles onions and a sesame seed bun.”

It’s the BIG MAC jingle, of course. You remember it, right?  I’m not ashamed to admit I still know it by heart.

That’s because way back in 1974 when the iconic jingle was launched, I was in my twenties, just out of U.C. Berkeley and working for a well-respected food brokerage company in San Francisco. The world has changed a lot since then, but the BIG MAC remained the same – as it has always been – until just a few days ago.

But before we go into the new tastier Big Mac changes, let’s take a minute to look back at the history of this iconic burger. 

Who invented the BIG MAC?  It was Jim Delligatti, a McDonald’s franchisee, in Uniontown, Pennsylvania, in 1967.  He wanted to create a larger, more filling burger for the adult population, so he came up with the idea of a double-decker burger with two all-beef patties, special sauce, lettuce, cheese pickles onions and a sesame seed bun.  After testing, it launched nationally in 1968 in the United States and contributed greatly to McDonald’s growing popularity. The catchy jingle McDonald’s used in their advertising campaign in 1974 could be heard on the lips of young and old alike.

This burger became a global symbol of fast food and the American culture. The Big Mac success in the United States led to its introduction in McDonald’s restaurants around the world. In 1986 the Big Mac gained additional fame due to an economic concept called the “Big Mac Index” developed by the Economist Magazine.  It used the price of a Big Mac in different countries to compare purchasing power parity and currency valuations.

At the time of the Big Mac rollout, McDonald’s was competing with Burger King, founded in 1954 who offered its own signature burgers such as the “Whopper” and boasted of flame-grilled burgers.  There was also Wendy’s, founded in 1969, who differentiated itself by offering square-shaped burgers and a larger selection of items on the menu.  Wendy’s focused on fresh ingredients.  Jack in the Box, founded in 1951 was another fast-food chain that McDonald’s competed with – it was known for its variety of food options and its drive-thru service.  Finally, there was A&W, founded in 1919 and known for its root beer and drive-in restaurants.  It offered burgers along with its own signature root beer and was a viable competitor of McDonalds. These fast-food chains were all vying for customers in the expanding fast food market. McDonald’s development of the Big Mac was part of its strategy to offer a distinctive burger that would set it apart from its competitors and appeal to a wider range of customers.

Despite evolving tastes and changing food trends, the Big Mac has remained popular for decades and serves as one of McDonald’s flagship products found on menus throughout the world.  So why change it? 

Because McDonald’s wants to make it better… and tastier. They certainly don’t rest on their laurels.  Just a week or so ago, they announced the following changes:

  • “Softer, pillowy buns that are freshly toasted to a golden brown.”
  • “Perfectly melted cheese”
  • “Juicier, caramelized flavor from adding white onions to the patties while they’re still on the grill.”
  • “Even more of everyone’s favorite Big Mac sauce

It’s only been selling for a short while in Australia, Canada, and Belgium along with some West Coast cities in the USA, but so far, according to McDonald’s, they say the burger’s getting “rave reviews.”
