Summer is Here! Food Safety Guidelines to Avoid Foodborne Illness

On June 21st, we officially welcomed summer – a season of picnics, barbeques, and outdoor eating. While camping, hiking trips and family vacations abound so does the chance for foodborne illness to occur if proper food safety guidelines are not followed. Warm weather is the perfect breeding ground for foodborne bacteria to multiply rapidly, thus safe food handling is a must.

Separate what’s packed in the cooler – perishable items in one cooler and beverages in another.

Travel Tips for Safe Food Handling:

  • Cold Food should be stored at 40 degrees F or below to prevent bacterial growth so make sure you pack with ice or frozen gel packs. Even better, pack meat and poultry or seafood while it is still frozen.
  • Wash fruits and vegetables before packing in the cooler and make sure they are thoroughly dry.
  • Separate what’s packed in the cooler – perishable items in one cooler and beverages in another. Keep coolers closed and only open when necessary.
  • Avoid cross-contamination. Keep raw meat, poultry and seafood wrapped securely so their juices will not contaminate prepared or cooked foods or foods that will be eaten raw such as fruit and vegetables.

Grilling Tips to Keep Food Safe:

  • Marinate food to be grilled in the refrigerator – not outdoors or on your kitchen counter. If some will be used as a sauce, keep it separate.
  • If you partially cook your food before grilling, it should be placed on the grill immediately and not left sitting out.
  • Don’t reuse platters or utensils that previously held your raw meat or seafood. Bacteria from the raw food’s juices will spread to the cooked food. Have clean utensils ready once the grilling is complete to serve your guests.

Temperature Tips – Keep Cold Foods Cold and Hot Foods Hot

  • Cold Food must be kept at 40 degrees F or lower until served. Once you have begun to eat, any leftover food should not sit out for longer than 2 hours, or 1 hour if the temperature is above 90 degrees. This is the perfect breeding ground for bacteria and illness. Place things like chicken salad or desserts on ice until eaten.
  • Hot Food should be kept hot (above 140 degrees F). If not serving immediately, wrap in foil and/or place in an insulated container until you are ready to eat. Hot foods should not sit out for more than 2 hours or 1 hour if temperatures are over 90 degrees F.

Final Tips:

  • Keep things clean including all dishes, cutting boards and utensils.
  • Clean vegetables and fruit thoroughly before eating.
  • If you are eating canned goods, wipe down the lids carefully before opening.
  • Use a cooking thermometer to ensure food is cooked to a safe internal temperature to destroy harmful bacteria.
  • Keep raw meat, poultry, seafood, and eggs separate from other foods – not only when camping or traveling but in your refrigerator at home.
  • Don’t place cooked food on a plate that originally held raw food unless the plate has been washed in hot, soapy water.
  • Refrigerate or freeze meat, poultry, eggs and seafood and other perishables within 2 hours of cooking or purchasing – 1 hour if the temperature is above 90 degrees F.
  • Defrost food properly – in the refrigerator, cold water or the microwave and then cook immediately.

6月21日の夏至をもって、公式に夏に突入しました。ピクニックやバーベキューなど、アウトドアで食を楽しむ季節です。キャンプ、ハイキング、家族旅行の計画も目白押しかもしれませんが、食品安全性のガイドラインを適切に守らないと、食中毒が起こる確率も高まります。暑い季節は、食品を媒介するバクテリアにとって理想的な環境を生み出し、バクテリアが急速に繁殖しますので、注意して食品を取り扱うことが欠かせません。

クーラーボックス内で食品を分けて梱包し、傷みやすい食品のボックスと飲み物のボックスを別に用意します。

食べ物を持って出かける時の安全な取り扱い:

  • 冷蔵すべき食品は5℃以下で保存して、バクテリアの成長を抑えるべきです。ですので、氷や保冷剤を必ず入れてください。できれば、肉類や魚介類は冷凍のままでクーラーボックスに入れます。
  • 野菜と果物は洗ったうえで、完全に乾かしてから、クーラーボックスに入れます。
  • クーラーボックス内で食品を分けて梱包し、傷みやすい食品のボックスと飲み物のボックスを別に用意します。クーラーボックスは、必要でないかぎり開けないようにします。
  • 食品間で汚染が広がらないようにします。未調理の肉類や魚介類は、水分が漏れたり
  • しないように容器や袋に密封して、他の調理済みの食品や野菜と果物など生のまま食べる食品を汚染しないようにします。

バーベキューの際の注意点:

  • 食べ物をマリネする際は、屋外や室温の場所ではなく、冷蔵庫で漬け込みます。調理後にソースとしてかけて使用する分は、マリネの漬け汁とは分けます。
  • バーベキューの前にあらかじめ少し調理する場合は、その後すぐにバーベキューグリルで調理します。下ごしらえの後に放置しないでください。
  • 生の肉類や魚介類に触れた皿や器具を再使用してはなりません。生の食品の水分に含まれるバクテリアが、調理済みの食品に広がります。調理を終えたら、未使用の器具で取り分けて、銘々に供します。

食品の温度 冷たいものは冷たく、熱いものは熱く保つ

  • 冷たい食品は、食べる時まで5℃未満に保ちます。食べ始めたら、2時間以上、出しておいてはなりません。気温が30℃を超える場合は、1時間以内に片付けます。放置された食品は、文字どおりバクテリアと食中毒の温床になります。チキンのマヨネーズ和えやデザート類は、食べるまで氷の上に置いておきます。
  • 熱い食品は、熱いまま(60℃以上)に保ちます。すぐに食べないのであれば、アルミホイルに包むか保温容器に入れて、食べる時まで保温します。熱い食品も、2時間以上、出しておいてはなりません。気温が30℃を超える場合は、1時間以内に片付けます。

まとめのアドバイス:

  • 皿、まな板、器具など、すべてを清潔に保ちます。
  • 野菜と果物は、食べる前に徹底的に洗います。
  • 缶詰食品を食べる場合は、缶を空ける前に蓋の汚れをしっかり拭き取ります。
  • 調理用温度計を使用して、内部まで加熱され、有害なバクテリアを殺傷できる温度に達したことを確認します。
  • 未調理の肉類、魚介類、卵は、他の食品とは分けておきます。キャンプやバーベキューの時だけでなく、自宅の冷蔵庫でもそうしてください。
  • 未調理の食品に使った皿は、洗剤と熱いお湯で洗ってからでないかぎり、調理済みの食品には使用してはなりません。
  • 肉類、魚介類、卵、その他の傷みやすい食品は、調理後または購入後2時間以内、気温が30℃以上の場合は1時間以内に冷蔵します。
  • 食品を解凍する際は、適切な方法を用います。冷蔵庫に置く、流水につける、または電子レンジで加熱して解凍し、すぐに調理します。

夏はおいしいアウトドア料理を楽しむ季節です。とはいえ、夏は食中毒が非常に起こりやすくなりますから、くれぐれも予防に努め、安全に楽しんでください!
