Taco Bell will open its first “Defy” restaurant in Brooklyn Park, Minnesota in 2022. The artist rendering of this fabulous new restaurant is shown below. It looks a little like a bank with drive through windows, doesn’t it? It’s very high tech and you won’t interact with anyone, even as you receive your food. The kitchen and preparation of food is done above the drive-through lanes.
Taco Bell “Defy” Restaurant
This is a far cry from the Taco bell we all know now and have no doubt visited at one time or another in our lifetimes. This “digital only” restaurant will have four drive-through lanes for customers and there’s no seating inside or anything like that. You simply order your food ahead online (using the Taco Bell app), enter one of the drive-through lanes, scan the barcode on your phone and receive the food. Then off you go to enjoy a Taco Bell taco without ever seeing a human!
One of the four lanes has a terminal where you can order your food onsite (like we do today) and wait for your food. But it’s much quicker to order ahead, drive through one of the other three lines and pick up your order. If you’re ordering from Taco Bell and using a delivery service like GrubHub or Uber Eats, nothing changes. The driver uses the same process by scanning your barcode on their phone to pick up your order. How easy it has become!
So, how is the food delivered to you without a human? Taco Bell will use pneumatic tubes like in a bank. Once your order is ready, your food will be sent down to you from the kitchen above via the tube. What a cool way to increase the speed of delivery and pick up of orders. We’ll keep an eye on this one.
Wendy’s Ghost Kitchen
What’s a “ghost kitchen” anyway? It’s a mobile kitchen that produces “delivery-only” orders. It looks like a food truck, but you cannot order from this vehicle.

Wendy’s has partnered with a company called Reef Technology. This company makes prefabricated “ghost kitchens” that can go anywhere and make deliveries for any Wendy’s restaurants in the area. So, the orders will no longer be delivered to you from the restaurant itself, but rather from one of these ghost kitchens. It tells us that Wendy’s must expect online orders for delivery to continue and grow and that this new method wills save time and money. This is a big change in operating procedure for Wendy’s and a large investment.
If these concepts are successful, expect other fast-food chains to follow!
