Figures released last month by the U.S.D.A. Census of Agriculture show that trends behind America’s farms and diets are changing.   Leafy Greens, including kale, along with sweet potatoes, once thought to be fads are now changing America’s terrain.

Sweet potato acreage increased almost 38% from 2012 to 2017.   White potatoes along with white flour and white rice have gotten a bad rap over recent years for their high glycemic load.  Sweet potatoes with fewer carbs and calories and featured on the South Beach Diet, Paleo and others have helped with its growing consumption.

Healthy benefits of leafy greens have been highlighted in recent years and are growing in popularity.   Farmers are increasing acreage for all types of leafy greens, including kale, despite all the recent scares regarding E Coli.

The second most planted crop in the U.S.A. is sweet corn and its decline was reported at a 13% drop over recent years.  Other crops reported as losing share were green beans, peas and white potatoes.

A focus on health and consuming more greens and lower carb options are changing the landscape of American agriculture.
