The Impossible Burger or a Beyond Burger? The Popularity of Plant -Based Proteins is Growing

Nothing is impossible. Well, almost nothing…but have you tasted an Impossible Burger yet?

If not, you’re in for a treat.  They recently changed and improved their product formulation and it’s even better than before!  As of April 2019, all restaurant partners should now be selling the new,updated recipe. Their aim with the new formulation is to make the NEW Impossible Burger even “tastier, juicer and more nutritious” than the original recipe.  Apparently, they’re on the way with 30% less protein and 40% less saturated fat.  With regard to protein, you’ll find this new burger still contains as much protein as available from 80/20 ground beef from cows, but it no longer contains wheat protein. This change was made to make the new formulation gluten free.

However, the Impossible Burger does contain genetically modified ingredients (GMO) and the company claims to need to use such ingredients in order to achieve “a product that rivals or surpasses beef for flavor, texture, nutrition, sustainability versatility and accessibility.” They use two key genetically modified ingredients:  heme (soy leghemoglobin) – this is the magical ingredient that makes meat taste like meat and soy protein sourced from farms in Iowa, Minnesota and Illinois.

Here are the ingredients of the updated new Impossible Burger:

Water, Soy Protein Concentrate, Coconut Oil, Sunflower Oil, Natural Flavors, 2% or less of: Potato Protein, Methylcellulose, Yeast Extract, Cultured Dextrose, Food Starch Modified, Soy Leghemoglobin, Salt, Soy Protein Isolate, Mixed Tocopherols (Vitamin E), Zinc Gluconate, Thiamine Hydrochloride (Vitamin B1), Sodium Ascorbate (Vitamin C), Niacin, Pyridoxine Hydrochloride (Vitamin B6), Riboflavin (Vitamin B2), Vitamin B12.

Contains: Soy

You can enjoy an Impossible Burger in many restaurants these days but most well-known are in specific locations of Burger King( The Impossible Whopper), Cheesecake Factory, Applebee’s, Hard Rock Café, Houlihan’s and many more. And in the coming months watch for them to make a BIG PUSH into the Asian market where 46% of the world’s meat is consumed. Impossible Burgers are impossibly delicious!

THE BEYOND BURGER FROM BEYOND MEAT

According to their website, Beyond Burger calls itself “the world’s first plant-based burger that looks, cooks and satisfies like beef without the gmos, soy or gluten.”  Their mission is “to create The Future of Protein ® – delicious plant-based burgers, sausage, crumbles and more – made directly from simple plant-based ingredients. By shifting from animal to plant-based meat, we are creating one savory solution that solves four growing issues attributed to livestock production: human health, climate change, constraints on natural resources and animal welfare.”

Beyond Meat, in its quest for never-ending improvement, also recently reformulated its Beyond Burger to make it look even more like meat by adding coconut oil and cocoa butter in small bits (for a marbling effect) which melt into the burger as it is grilled.  Mung bean and rice proteins as well as pea protein have also been included adding more protein and fiber.  This super delicious product, both fresh and frozen is now sold at more than 30,000 retail and food service outlets worldwide.  They enjoy excellent success at TGI Friday and Carl’s Jr., (their largest U.S. partner to date) and the Canadian market loves this burger too – you’ll find it at A&W and Tim Horton’s in Canada and that market is growing. The Beyond Burger is a great choice for those looking for dairy, soy and gluten-free product.

Beyond Burger Ingredients: water, pea protein isolate, expeller-pressed canola oil, refined coconut oil, contains 2% or less of the following: cellulose from bamboo, methyl cellulose, potato starch, natural flavor, maltodextrin, yeast extract, sale, sunflower oil, vegetable glycerin, dried yeast, gum arabic, citrus extract, ascorbic acid, beet juice extract, acetic acid, succinic acid, modified food starch, annatto.

And for those investors reading this…Beyond Meat went public this year and priced its initial public offering (IPO) on May 2, 2019 at $25 per share. The first trade was $46 which was 84% above the IPO price and it closed its first day at $65.75, 163% above its IPO Price which made it the best-performing first day IPO in nearly 20 years.  With the proceeds raised they plan to expand current manufacturing facilities and open new ones (look for plants in Europe in 2020), finance research and development and continue to increase sales and marketing efforts according to their prospectus.

Because plant-based “meats” are now tastier and very similar in texture and appearance to real meat and contain equivalent amounts of protein, they’re a good alternative for vegetarians and vegans. Their popularity has caused the use of pea protein to skyrocket increasing the need for more dried yellow peas.  There is no doubt that the use of plant-based proteins and the trend toward healthier eating is underway with the popularity of plant-based foods growing daily.  Although the Impossible Burger and Beyond Burger have enjoyed the limelight and a lot of publicity recently, they face fierce competition from many other players in this area.  We believe that this life-changing trend toward plant-based eating is in its infancy and is here to stay for a long time.

After all, nothing is impossible!

これ、おすすめです。最近、レシピが改良されて、今まで以上においしくなりました! 2019年4月時点で、取り扱いのあるレストランはすべて、この改良版の製品を使っているはずです。新しいレシピでは、オリジナルよりも「おいしく、ジューシーで、栄養価が高い」バーガーを目指しました。以前のレシピに比べて塩分を30%カット、飽和脂肪酸を40%カットしたそうですから、明らかに改良されています。タンパク質という点では、新しいバーガーも今までどおり赤身肉80%、脂肪20%の牛ひき肉と同量を含有していますが、今までのように小麦プロテインは含まなくなりました。これは、グルテンフリーにするための変更です。

ただし、Impossible Burgerには、GMO(遺伝子組み換え)の原材料が含まれています。「風味、食感、栄養価、幅広い調理法、サステナビリティ、アクセシビリティの点でビーフと互角か上回る製品」を達成するためにその必要があると、製造元のImpossible Foodsは説明しています。使われているGMOの原材料は、主に2つあります。肉のような味を作る魔法の成分とされるヘム(大豆レグヘモグロビン)、そして大豆プロテインで、アイオワ州、ミネソタ州、イリノイ州の生産者から調達されています。

Beyond Meatは、常に改良を心がけていて、やはり最近、Beyond Burgerのレシピを変更しました。肉のような見た目を高めるため、ココナッツオイルとココアバターをわずかに加え(霜降り肉のように見えます)、加熱調理をすると、この脂が融け込むようになりました。また、緑豆(リョクトウ)、米プロテイン、エンドウマメプロテインを加えて、タンパク質と食物繊維の含有量を高めました。このスーパーデリシャスな製品は、生鮮食品や冷凍食品として、世界各地のスーパーやレストラン3万店以上で取り扱われています。外食チェーン店のTGI FridayとCarl’s Jr.(現時点で米国内最大のパートナー)で成功を収めているほか、カナダ市場でも好評を博していて、A&WやTim Horton’sなどに入っていて、さらに販路を拡大中です。Beyond Burgerは、乳製品、大豆、グルテンを避けたいと思っている人におすすめです。

投資をなさる方のために付け加えておくと、Beyond Meatは2019年5月2日に株式公開し、1株25ドルの売出価格で上場しました。即座に84%高の46ドルで取引が開始され、初日の終値は163%高の65ドル75セントとなり、過去20年弱で最大の上場初日の上げ幅を記録しました。株式市場で調達した資本は、既存工場の拡張と新規工場の建設(2020年にヨーロッパで開設予定)のほか、研究開発、販売・マーケティングなどの活動に使われると、目論見書では説明されています。

肉に代わる植物性食品は、今では味が向上し、肉に非常によく似た見た目と食感を実現して、肉と同等のタンパク質を含むようになっていますから、ベジタリアンやビーガンの人に良い代替をもたらします。この人気を受けて、エンドウマメ由来のプロテインも使用量が急増し、黄エンドウマメの乾燥品に対する需要が高まりました。植物性タンパク質の使用やヘルシーな食生活へのトレンドが植物性食品の人気を日々高めていることは、疑いの余地がありません。今のところImpossible BurgerとBeyond Burgerが大きく取り沙汰され話題を集めているのは事実ですが、他社との競争も激化しています。私たちの生活を変える植物性食生活のトレンドは、始まったばかりです。今後も長い間にわたって続いていくことでしょう。
