As Listeria Outbreaks Continue AFFI Offers Listeria Control Certification


What you need to know about Listeria Monocytogenes

Foods that are contaminated with Listeria monocytogenes often look perfectly good to eat. In other words, they may not be spoiled or have an “off” smell, yet those who eat such foods could be at high risk of serious infection. If you feel you have eaten any such products, or receive word of a Listeria recall, you should contact your doctor immediately. Note that it can take up to 70 days after exposure for symptoms to develop. These may include vomiting, nausea, fever, muscle aches, severe headache, and neck stiffness. What you may think are symptoms for Covid-19, may indeed be Listeria. Those who are at particular risk are pregnant women, cancer patients, the elderly, and young children. Listeria can survive in refrigerated temperatures and can easily spread to other foods and surfaces.

Unfortunately, recent data shows that foodborne illnesses have not seriously declined over the past two decades. And it is not just listeria, but salmonella as well. The government’s Healthy People 2010 and 2020 set goals for reduction of foodborne illness but they have not been achieved. The poultry’s salmonella standards have not been updated since the early 1990’s. Due to the work of STOP (Stop Foodborne Illness) and various coalition groups that the update of these salmonella standards has been made a priority.

Back to Listeria and the most recent outbreak. The FDA and CDC along with state and local partners continue to investigate a multistate outbreak of Listeria connected with Fresh Express Salads.

“As a part of routine sampling, the Michigan Department of Agriculture and Rural Development (MDARD) collected a product sample of Fresh Express Sweet Hearts salad mix with a Use-By-Date of Dec. 8, 2021, for testing. The sample tested positive for Listeria monocytogenes and subsequent whole-genome sequencing (WGS) analysis determined that the Listeria monocytogenes present in the samples match the strain that has caused illnesses in this outbreak.”

AFFI Addresses Listeria Problem: It is all too often that we continue to hear and read about Listeria outbreaks. AFFI (The American Frozen Food Institute) continues to approach this problem. They hosted a Food Safety Forum recently and more than 700 registrants attended from across the food industry including global research experts, industry professionals and food safety policy leaders. AFFI has also launched a New Listeria Control Training in partnership with the IFPTI – International Food Protection Training Institute. This is a Listeria Control Specialist Certificate Program for food safety management. The curriculum is based on AFFI’s Listeria Control Program. To date, only 80 individuals have completed the course and received certification but that is better than none. 「定期的なサンプル調査の一環として、ミシガン州の農業・農村開発局は、Fresh Expressのサラダ製品『Sweet Hearts』のサンプルを収集して試験しました。消費期限は2021128日でした。このサンプルにリステリア菌が発見され、その後の全ゲノムシーケンス解析により、この大量発生の原因となった株と合致することが確認されました」。


またAFFIは、国際食品保護研修研究所(IFTPI:International Food Protection Training Institute)と協力して、リステリア菌の管理をテーマにした新しい研修制度も導入しました。「リステリア菌管理スペシャリスト(Listeria Control Specialist)」の認証制度で、AFFIのリステリア菌管理制度に基づいたカリキュラムです。これまでに研修コースを修了して認定を取得した人は80人しかいませんが、皆無の状態よりはましです。食品生産施設の食品安全性、特にリステリア菌の管理に携わっている方は、この認証について必ず知っておくべきです。これについてはこちらでお読みください。
