The Return of the Automat, A Modern Solution to “Contactless” Eating

In the early 1900’s the residents of Philadelphia experienced a new kind of dining – the first Automat called “Horn and Hardart” (named after its founders) had just opened.  It was a huge success. Food was chosen by the customer from a wall of cubbies that were coin-operated, and the quality of food couldn’t have been better!  Hungry customers could select anything from home-style comfort food like mashed potatoes or mac and cheese to a sandwich, salad or piece of delicious home-made pie.  By the 1950’s there were over 100 Horn & Hardart Automats in New York alone.

People loved them! There were several advantages that immediately made the automat concept so popular; food was hot and ready to eat as soon as put your coins into the cubbies; with little or no human interaction it was a more hygienic experience, especially with the Spanish Flu pandemic of 1918; it was fresh; you could view your food before choosing; best of all…it was inexpensive and affordable since waiters or waitresses were no longer required.  It fulfilled the needs of busy New Yorkers from businessmen to shoppers and appeared to be the way of the future. 

But fast food” would eventually take over.  By the 1960’s things were changing.  Enter hamburger chains like McDonalds and Burger King.  People could grab their food and be off to destination in just a matter of minutes.  Automats began to close locations as consumers lost taste for the coin-based cubbies and preferred a different type of fast food instead.

Fast forward to December 2020.  In the midst of the Covid-19 pandemic the automat has been reborn in a new, tech-based consumer-friendly style.  Brooklyn Dumpling Shop touts a “zero human interaction” experience and is taking its model worldwide.  They have partnered with franchise developer Fransmart and plan to have 1000 North American locations as well as 25 other locations throughout the world.  The first unit is scheduled to open in Manhattan in December 2020.

Whats on the menu and how does it work?  The kitchen is using technology from Miso Robotics – they’re the ones who made the automated fry cook “Flippy”.  Consumers have plenty of choice with 32 dumpling varieties on the menu along with spring rolls, drinks and dessert.  Yum!  And you can even watch how the dumplings are made in a dumpling lab in the front window as you wait. 

It’s the “new” automat for sure, controlled from your smart phone and best of all it’s 100% contactless.  You order from your phone or in-store kiosk and are notified when your dumplings are ready to be picked up from a temperature-controlled cubby that you access by scanning a code on your phone.  Easy!  No coins involved!    It may not be as inexpensive as the food served from the original automats but its sure to be delicious and right on target for the new eating habits that have come about due to the Covid-19 pandemic.  We believe you’ll see many more such automated eateries in the near future.

年代までには、ニューヨークだけで100店以上のHorn & Hardartが営業していました。

あっという間に大人気! オートマットのコンセプトが短期にこれほど人気を博した理由はいくつかありました。温かい食事がすでに用意されていて、硬貨を入れればすぐに食べられたこと。人と接する必要がほとんど、あるいはまったくなかったため、衛生的であったこと(特に1918年のスペイン風邪の大流行がありました)。出来立てで、選ぶ前に、ケースに入った食事を見られたこと。そして何よりも、ウェイターやウェイトレスが必要ないため、安価だったことです。ビジネスマンから買い物客まで、忙しいニューヨーカーのニーズを満たし、これが未来の食事のあり方だと思われました。

やがてファーストフードが台頭。しかし、1960年代までには、状況が変わりつつありました。マクドナルドやバーガーキングのようなハンバーガーのチェーン店が参入してきたからです。これらの店では、ものの数分で食べものをテイクアウトして、次の目的地へと向かうことができました。この異なる種類のファーストフードが台頭するにつれ、自動販売機を基本としたオートマットは人気が衰え、閉店し始めました。

 

オートマットが復活
そして、時は2020年12月。新型コロナウイルス感染症のパンデミックを受けて、オートマットが便利でハイテクな新しいスタイルで復活しました。「Brooklyn Dumpling Shop」は、「人との接触ゼロ」をうたい文句にして、このモデルで世界進出を目指しています。フランチャイズ開発会社のFransmartと提携して、北米1,000店、世界各地に25店を開店する計画です。その第1号店が2020年12月、マンハッタンにオープン予定です。

これが新世代のオートマットであることは間違いありません。スマホで操作し、何と言っても100%非接触です。注文はスマホのほか、店内のキオスクでも入れることができ、出来上がると通知されます。受け取りは、保温機能付きのケースからで、スマホのコードをスキャンするとドアが開きます。簡単で硬貨は必要ありません! 元祖オートマットの食事ほど安価ではないかもしれませんが、おいしいはずですし、このパンデミックから生まれた新しい食習慣にぴったりです。このような自動レストランが、今後もっと増えることでしょう。
